SCHWAMMERL
The vegan restaurant ‘Schwammerl’ is presented below. As the name suggests, the concept is inspired by the natural networks of mycelium – an invisible underground network that connects mushrooms and plants. This idea is reflected not only in the cuisine, but also in the design and atmosphere.
For the first time, we intensively explored the materiality of the mycelium, which led us to furniture and design solutions that are both sustainable and innovative.
